Shepherd's Pie


Both my home daycare children and my own 2 kids love this recipe by Alton Brown. We use beef instead of lamb and omit the two spices.

Banana Muffins



Ingredients
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 overripe bananas
1 cup brown sugar
3/4 cup unsalted butter, melted
2 eggs
1 teaspoon pure vanilla extract


Directions
Preheat oven to 375 degrees and line muffin tins. (We used parchment paper liners!)

In a large bowl, combine the flour, baking soda, and salt - set aside. Mash the bananas with a fork on a small plate. With an electric mixer whisk, bananas and sugar together about 3 minutes. Add the melted butter, eggs, and vanilla, beat well. Fold in the dry ingredients. Scoop the batter into the muffin tins about 3/4 full.

Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Serve warm or at room temperature.
